I have 2 new favorite vegetables, Spaghetti Squash and Zucchini, so you will be seeing me post a few (ok maybe a lot of) recipes with these 2 low carb vegetables. They can be used in place of noodles and are so yummy. The lower carbs helps keep our blood sugars from spiking and causing us to have that energy crash we often experience after eating a higher carb food like rice and pasta.
